Vegetable Medley

Ingredients:

  • 1 cup sliced zucchini squash

  • 1 cup carrot sticks

  • 1 cup frozen ready tri-color pepper & onion blend

  • ½ cup pink beans

  • 1 tablespoon chopped garlic

  • ½ cup canned tomato sauce

  • 2 teaspoons parsley

  • 1 teaspoon salt

  • ½ cup water

Directions:

1. Heat butter and garlic over medium heat.

2. Add all vegetables and corn, season with salt and pepper, sauté and stir.

3. Add tomato sauce with ½ cup water with parsley.

4. Simmer for 8 minutes and serve!
