Pineapple Chicken Salad
Ingredients:
1 lb. boneless, skinless chicken breasts
¼-½ cup slivered almonds
1 can mandarin oranges, drained
1 can diced pineapple chunks, drained and rinsed
Head of lettuce
Directions (makes four servings):
In a pan, bring 1 cup water to a boil, add chicken, reduce to a simmer, and cover. Let cook for about 20 minutes, or until juices run clear when pricked with a fork.
Cool chicken, then dice and place in a large bowl.
Add pineapples, mandarin oranges and almonds to the bowl and mix.
Toss with dressing of choice.
Add ingredients over a bed of lettuce and enjoy!
