Pineapple Chicken Salad

Ingredients:

  • 1 lb. boneless, skinless chicken breasts

  • ¼-½ cup slivered almonds

  • 1 can mandarin oranges, drained

  • 1 can diced pineapple chunks, drained and rinsed

  • Head of lettuce

Directions (makes four servings):

  1. In a pan, bring 1 cup water to a boil, add chicken, reduce to a simmer, and cover. Let cook for about 20 minutes, or until juices run clear when pricked with a fork.

  2. Cool chicken, then dice and place in a large bowl.

  3. Add pineapples, mandarin oranges and almonds to the bowl and mix.

  4. Toss with dressing of choice.

  5. Add ingredients over a bed of lettuce and enjoy!
