Salmon, Spinach & Cauliflower

Ingredients:

  • 6 oz wild salmon

  • 4 cups fresh spinach

  • 1 teaspoon garlic salt

  • 1 teaspoon lemon pepper seasoning

  • 1 tablespoon garlic

  • 2 tablespoons extra virgin olive oil

  • 1 cup of mashed cauliflower (commercially available microwavable)

  • 1 teaspoon dill

  • 1 lemon wedge

Directions (makes one serving):

1. Heat medium sized pan with 1 tablespoon of olive oil.

2. Add spinach while pan is heating up, toss and season with garlic salt and cover. Cook and toss occasionally for 8 minutes.

3. In a separate medium sized non-stick pan, heat 1 tablespoon of olive oil with garlic.

4. Season salmon with lemon pepper seasoning and grill both sides for approximately 5 minutes each.

5. Microwave Birds Eye Steamfresh Veggie Made™ Mashed Cauliflower Original for 5 minutes.

6. Plate ingredients and enjoy!
