Vegetables & Eggs

Ingredients:

  • 2 large whole eggs or 1 cup pasteurized egg whites

  • 1 cup non-starchy vegetables (spinach, peppers, onions, tomatoes, or chopped broccoli)

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • Dash of pepper

  • Optional: 1 oz. low fat cheddar or Colby cheese

Directions:

1. Heat non-stick skillet on medium heat.

2. Heat olive oil simultaneously.

3. Add vegetables and cook for 5 min.

4. Add eggs to skillet and scramble.

5. Add salt and pepper to taste and serve!
