Fish and Grits

Ingredients:

  • 1 packet of instant grits, butter flavor, dry

  • 1 can of skinless boneless sardines

  • ½ cup chopped peppers, all colors

  • ¼ cup chopped onion

  • 1 whole egg

  • Optional: 1 oz cheese

Directions (makes one serving):

1. Heat skillet with non-stick spray.

2. Add fresh or frozen vegetables to pan and sauté.

3. Add egg and scramble.

4. Add one packet of grits to a bowl with a ½ c of water, heat in microwave for 2 minutes.

5. Add vegetables and eggs to grits, open can of sardines, drain oil and add to bowl, mix, and garnish with tomatoes!
