Fish and Chips

Ingredients:

  • 1 lb. fish fillets, cut into sticks

  • 2 tablespoons olive or canola oil

  • ⅓ cup crispy rice cereal or cornflake crumbs

  • 1 whole potato, cut into thin slices

  • 1 small side salad

Directions:

1. Preheat oven to 450°F.

2. Wash and dry the fish fillets.

3. Season each fillet with sea salt and pepper as desired; coat with oil.

4. Dip the fish fillets into the cereal crumbs .

5. Arrange the fillets in a shallow, nonstick pan and bake for 12 minutes; don’t turn.

6. Cut the whole potato into thin slices and spread on a separate nonstick baking sheet. Add to oven and cook until golden brown.

7. Serve with a wedge of lemon.
